Roasted Sweet Potatoes
Preheat oven to 200°C or 400°F.
In a medium bowl, whisk dijon mustard, honey and olive oil.
Toss sweet potato wedges in the mixture with your hands. Make sure all wedges are evenly coated, wiping off any excess liquid.
Lay sweet potato wedges in a single layer on a baking tray and roast for 15-20 minutes until browned and crisp at the edges.
Herb Yoghurt Dressing
Mix all ingredients in a medium bowl: greek yoghurt, lime juice, salt, dill. Taste to adjust seasoning.
Lay roasted sweet potatoes on a platter and drizzle with your yoghurt sauce. Serve and enjoy!
