Roasted Carrot Hummus


Got carrots and don't know what to do with them? Hummus them with this easy recipe.

We believe you can “hummus” almost anything. But, here’s the proof. Our version of hummus made with the humble carrot, a vegetable that is available locally all year round — and is probably already in your kitchen!

Ingredients


Roasted Carrots

  • 1 lb carrots, approximately equal to 4-5 medium sized carrots, chopped into rounds. Do not remove skin.
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • Grind of pepper


Hummus

  • Zest of 1 lemon
  • Juice of 1 lemon 
  • 3 tablespoons olive oil 
  • 3 teaspoons ground cumin
  • A pinch of cayenne. You can always add more for spice.
  • ½ teaspoon honey 
  • 1 tablespoon fresh cilantro

Get your prep on! For quick and seamless cooking, always read through the recipe first and understand its steps. Afterwards, wash, cut, measure and weigh all your ingredients before you begin cooking. Place all the ingredients on a single tray. Never measure as you go. 

  1. Set oven to 425°F. Toss carrot rounds in olive oil, salt and pepper.

  2. Roast carrots for about 20-25 minutes when they start to look tender and golden.

  3. Purée carrots in a food processor or blender. Add ground cumin, cilantro, cayenne, honey, olive oil, lemon zest and lemon juice. Taste and adjust seasoning. Transfer to a platter, serve with assorted vegetable crudités and enjoy!
