Top tips: Haven’t got access to fresh coconut milk? Store-bought or any other nut milk, such as almond or cashew, are great too. You can also serve this as a warmer milk tea, perfect for the evenings!
In a large pot, place pandan, lemongrass and water. Bring to a boil and reduce to a simmer. Let this simmer for 45 minutes to an hour slowly to extract flavors. Save some pandan leaves for garnish.
Cool the tea, store excess in the refrigerator.
Place a teaspoon of wild honey in a glass, add some ice cubes, and fill up the glass with the cooled pandan and lemongrass tea. Top with coconut milk then place a stick of lemongrass for garnish. Serve cool!
