Banana muffins that serve as a treat for the whole family!

Welcome to the first of many Test Kitchen IGTV takeovers! In this session, we invited one of our favourite ladies, content creator Rima Ostwani and her adorable kids, Adriana and Matteo, to our test kitchen to bake this delicious treat for the whole family to enjoy.
As a mother, Rima is always in search of delicious yet healthy treats for her kids. Just like Rima, her daughter Adriana has a sweet tooth. Yes, it can be a problem for kids sometimes, but at Sigla, we’re here to prove that there are better alternatives you can use and recipes you could make that won’t cause the unwanted sugar rush our kids often get from consuming sweets! This recipe is made with nutrient-dense wild honey, almond flour, and one of our favourite fats to use in baking -- MCT or coconut oil, which is filled with all the healthy fats we need to provide energy and sustenance.

Notes: We love using MCT oil in our baked goods for that additional dose of healthy fats and nutrients! It is especially good for people who don’t love coconutty flavours but want to reap the benefits of consuming coconut oil. You can also use any GF flour blend of your choice for this recipe.
Get your prep on! For quick and seamless cooking, always read through the recipe first and understand every step. Wash, cut, measure and weigh all your ingredients before you begin cooking. Then place all the ingredients on a single tray. Never measure as you go.
Preheat oven to 350° F.
Mix all of your dry ingredients in a medium bowl with a whisk: almond flour, baking soda, sea salt, and chocolate chips, then set aside.
In another medium bowl, mix all of your wet ingredients with a whisk: bananas, raw honey, eggs, and coconut or MCT oil until everything is well combined.
Add your dry mixture to your wet mixture in increments to avoid lumps. Mix until you have a uniformed batter.
Scoop your batter into your muffin tin tray with muffin liners. Do not overfill to avoid spillage. The muffins will rise and create a beautiful browned layer.
Bake in the oven for 20 - 25 minutes or until you can poke the center with a toothpick and it comes out clean when removed.
Cool for 5 minutes and serve!
